Easy Eggplant Parmesan

Hello! Today I wanted to share a very easy recipe for eggplant parmesan.I made this last night and it turned out delicious. As my dad was saying last night, he said that it really fills you up, and you wouldn't think a vegetable could do that, but it does! For the recipe I thought I would show it mostly in pictures.

Ingredients:
1 egg
1/2 cup flour
1 teaspoon salt
1/2 teaspoon papper
1 cup breadcrumbs
1 large eggplant
1/4 cup olive oil
1 cup bottled spaghetti sauce
1 1/2 cups mozzarella

Preheat the oven to 350 F 

Start by cutting up one medium sized eggplant into 1/4" thick slices.


Then mix together the salt, pepper, and flour and dip one of the slices in and make sure it is fully coated.


Dip the eggplant slice into the egg and again make sure it's fully coated.


Lastly, coat the entire eggplant slice in the breadcrumbs. When you finish coating each slice put them aside onto a plate until you are done.


Heat up a little bit of the olive oil in a saute pan, then add the eggplant slices and cook them for roughly 3-4 minutes per each side, or until they are golden brown.


They should look like the one in the upper right corner...


Next step is very important!! If you don't have enough room for all the slices in the pan, then continue to do another batch. But, make sure that you wipe out the ban with a damp paper towel! This will prevent the next batch to taste burnt.

After you finish cooking all the slices put them on a baking sheet and spread the spaghetti sauce and mozzarella cheese over all the slices. Cook these in the oven for 10 minutes.

If you want to have something else with your eggplant parmesan, I would suggest making some pasta. This is what the dish looks like when it's finished. (Sorry the pic didn't come out great!)

Happy Birthday Card

Hello and Happy Saturday!! :) Today I wanted to do a quick share of this Happy Birthday card I made yesterday. I used the Classic Bloom stamp by Hero Arts. It's definitely my favorite stamp currently. So this is pretty similar to all of the cards I have been doing recently, but basically I masked off one of the flowers so I could get the layered effect, then I colored using my copics. These card are so easy and simple to create but look fabulous! I made some card sets with these stamps and sayings and they came together very quickly. 
Card measures 5.5" x 4.25"
Inner piece measures 5" x 3.75"

Here is a picture of the copic markers I used. Just a few went a long way because I did a lot of shading and blending!

Copic Coloring Flowers

Hi All! So recently I uploaded a tutorial on how I color this gorgeous stamp from Hear Arts, called Classic Bloom. I love the pop of yellow that is on the card and how the blue gives it a lot of definition! Watch the video below so you can see what I'm talking about! :)

Butterfly Birthday Card

Hello! Sorry I've been kind of MIA from my blog. Today I wanted to share an adorable card I made awhile back, before I started my blog. I really wanted to share this because it's one of my favorite cards I have made before! It's using these didi images except I only used one of the butterflies and made it different sizes in Microsoft Word. I then colored them with my copic markers using a purple and blue color. Lastly, I added the doily, background paper, and sentiment! Here is a picture of the completed butterfly card!

DIY: Beach Accessories

Hi! Today's project is this fun DIY project that I created in probably 15 minutes for all 3 vases! It's super quick and cute. :) I made beach themed accessories for my room which is kind of shabby chic/beach-y all mixed together. For the vases, I bought them at WalMart for about 1-$2, so it was super cheap. I then mixed in tissue paper, small glass pebbles which you can get at any craft store, and some faux sea shells. You can mix together any kind you like, but for my project I sticked with this theme. Layer together all of the materials, and you will get something like this! Here is what the finished project looks like.

Bike Ride Pics & Memorable Quotes

Hello! My dad and I took a bike ride on Sunday morning, and it was so beautiful! Aside from the heat everything was great. :) We thought we would take along the camera and take some pics of the cemetery that we always pass by. We go about 8 miles out from our house and there is a ton of flowers, trees, all clustered together on this small countryside. It's so gorgeous and so we captured it and I created a little video slideshow with some great quotes that I try to live by and think about. They are such great quotes that always make me smile when I read them. I took a long time editing this just so everything would transition smoothly, and the text was right so I would love if you could go ahead and take a peek!

Embroidery Floss "Tile" Card

Hi all! Today's card is inspired by one I found in Paper Crafts Magazine, it was so cute I just had to scrap-lift it! The card in the mag used twine, but I switched it up and used embroidery floss, which are practically the same thing! :) This magazine is really great and awesome for summer, check it out!
