Hello! Today I wanted to share a very easy recipe for eggplant parmesan.I made this last night and it turned out delicious. As my dad was saying last night, he said that it really fills you up, and you wouldn't think a vegetable could do that, but it does! For the recipe I thought I would show it mostly in pictures.
Ingredients:
1 egg
1/2 cup flour
1 teaspoon salt
1/2 teaspoon papper
1 cup breadcrumbs
1 large eggplant
1/4 cup olive oil
1 cup bottled spaghetti sauce
1 1/2 cups mozzarella
Preheat the oven to 350 F
Start by cutting up one medium sized eggplant into 1/4" thick slices.
Then mix together the salt, pepper, and flour and dip one of the slices in and make sure it is fully coated.
Dip the eggplant slice into the egg and again make sure it's fully coated.
Lastly, coat the entire eggplant slice in the breadcrumbs. When you finish coating each slice put them aside onto a plate until you are done.
Heat up a little bit of the olive oil in a saute pan, then add the eggplant slices and cook them for roughly 3-4 minutes per each side, or until they are golden brown.
They should look like the one in the upper right corner...
Next step is very important!! If you don't have enough room for all the slices in the pan, then continue to do another batch. But, make sure that you wipe out the ban with a damp paper towel! This will prevent the next batch to taste burnt.
After you finish cooking all the slices put them on a baking sheet and spread the spaghetti sauce and mozzarella cheese over all the slices. Cook these in the oven for 10 minutes.
If you want to have something else with your eggplant parmesan, I would suggest making some pasta. This is what the dish looks like when it's finished. (Sorry the pic didn't come out great!)
